I have a special philosophy to avoid all the bad stuff such as genetically modified foods, pesticides, herbicides, microwaves etc.I use wild, high-grade organic (and if needed the very best quality halal meats), best quality products and superfoods throughout my cooking. Using brands we can trust. Also, after sourcing the knowledge on my clients preferences, dietary requirements and we can go as far as organising a unique genetic body profile, I can design meals meant for them.”
Meet Will Walton, a seasoned chef with a rich culinary background. Having honed his skills from Commis to Sous Chef at Queenwood, one of Europe’s most prestigious private members clubs, Will spent 8 years there crafting exquisite dishes for A-list celebrities, athletes, and business luminaries.
Driven by a passion for exploration, Will embarked on a global culinary journey, seeking out the finest ingredients and recipes. His travels and experiences abroad transformed his approach from haute cuisine to a health-conscious perspective.
For the last decade, Will has dedicated himself to crafting balanced, toxin-free diets aimed at enhancing performance. In 2018, he specialized in catering to professional footballers, he alleviates the burden of dietary management, ensuring optimal performance on the field.
Taking innovation a step further, Will is looking in to how to tailors his creations to individual genetic profiles. By crafting personalized dishes, he maximizes nutrient absorption to bolster strength, endurance, and cognitive function. Join Will on a culinary journey where flavour meets performance excellence.
With over 22 years of professional experience, Will’s approach to food has evolved into a holistic philosophy that prioritises simplicity, nutrition, and quality.
Will focuses on bringing food back to its purest form by eliminating harmful pesticides and herbicides, using low-tox cooking methods, and prioritising nutrition over unnecessary presentation. His meals aim for balance, often incorporating 50% cooked and 50% raw ingredients, with an emphasis on micronutrients delivered through fresh, cold-pressed juices.
Water plays a vital role in my cooking. He exclusively uses Kangen Water for its ability to remove toxins, such as herbicides and pesticides, from produce. This heavily oxygenated, micro-clustered, electrolysed water enhances nutrient absorption and promotes overall health.
Will believes in the superior quality of organic and wild ingredients, sourcing fresh herbs, fermented foods, rare teas, spices, and activated nuts and seeds. He uses traditional techniques such as stone grinding and cook with cast iron pans to preserve the integrity of these exceptional ingredients.
Growing microgreens is a personal passion, and he uses them alongside other superfoods, such as wild-harvested sea moss, to complement dishes. His shift from classical training to healthier techniques began at 25 when he was inspired by travels to Scandinavia, India, California, and Spain, as well as time spent working in vegan restaurants in the UK.
Working closely with event co-ordinators and the client’s preferences, I create lasting food memories to compliment every party guests’ experience.

Here is a snapshot of certain areas I am passionate about and how I bring that to my food.
“During my travels I was lucky enough to visit India on many occasions. From picking my own allspice leaves from the jungle and then drying them out in the sun. Visiting plantations and picking vanilla pods, black pepper and teas – my own spice collection is vast and now after 15 years of intensely working with them I create my own unique spice blends – which are available on request.
I get wild fish fresh from billingsgate market. Fruits and veggies from local farms and selected international organic and wild producers. I use organic local farms for meat. Blessed to have lots in the area where I live.”
“A serious passion of mine is finding wild food. This isn’t all year round, only at certain times and in clean environments, when I can get five star wild ingredients. Through disclaimers you can try it.
Lots of wild herbs are available in the UK and have multiple health benefits. Nature is clever like that and grows certain foods for us at certain times for example eating green leaves in the summer helps to keep the body’s core temperature down, as they do themselves.
Pictured is a Wild Cep this is my no.1 thing to find, it’s protein content is second to none and excellent to eat for pre-match. I also have an Italian Truffle supplier, who gets me the finest wild, potent white and black truffles in the Autumn time – Not to be missed!”
